Yummy Chicken in 20 minutes?
Is it possible to do? Don’t want all the hassle of cooking and cleaning? On a tight budget? Want your athlete to take ownership of their nutrition? Young athlete friendly? In a dorm room? Only you? Little cooking skills? But still easy, yummy, healthy, quick, affordable, little mess and makes great leftovers! Try this out!
· 3lb (1.36 kg) whole chicken
Microwave safe, holds at least 14 cups
· Cook for 20 minutes in the microwave
with lid on. Should get to at least 160
degree temperature.
· Let set with lid on for at least 7-10
minutes for juices to settle
READY TO EAT!
TASTY FEAST ON A BUDGET
All these recipes are microwave friendly and are great for athletes on a budget or anyone looking for a quick and healthy meal.
One Pot Chicken Dinner in the Microwave
Ingredients Serves 4 ~$2.00 per person GET GROCERIES
1 whole chicken (3 lb/1.4 kg)
1 1⁄2 tbsp oil, divided
1 pkg Rotisserie Chicken Seasoning (Pack of 3) or Lemon Garlic Chicken Seasoning (Pack of 3)
1 lb (450 g) baby potatoes, cut in half
1 onion, peeled, cut in thin wedges
1 carrot, peeled, sliced
Ingredients Serves 4 ~$1.50 per person GET GROCERIES
2 large carrots
1 small red onion then wedges
2 bell peppers
4 cups broccoli florets
2 tbsp olive oil
2 tbsp Vegetable Seasoning or Lemon Dilly
1 carrot, peeled, sliced
Instructions
1. Peel and chop carrots and onion into equal-sized pieces. Coarsely dice peppers.
2. Place carrots, onion, peppers, broccoli, oil, and seasoning in Round or
Multipurpose Steamer. Cover and, holding lid tightly, shake the contents of the
steamer to evenly combine.
3. Microwave for 10-12 min or until vegetables are tender.
Apple Cheerio A La Mode in the Microwave
Ingredients Serves 6 ~$.41 per person GET GROCERIES
6 unpeeled apples, such as Gala, Granny Smith, Honeycrisp, or a mix
2 tbsp packed brown sugar--Optional -can get sweetness from apples naturally and flavored yogurt
1 tbsp Apple Pie Spice
1 tbsp lemon juice
Topping
1/2 cup large-flake rolled oats & 1/2 cup crushed Cheerios
1 tsp Apple Pie Spice
Dollop or pour more of yogurt of choice, prefer Chobani Complete
Instructions
Core apples; chop into 1⁄2" pieces. You should have about 6 cups.
Place apples in Square or Multipurpose Steamer. Stir in sugar, Apple Pie Spice, and lemon juice.
Microwave, uncovered, on high for 5 min, or until apples are tender and saucy.
Meanwhile, in another bowl, stir together topping ingredients.
Remove steamer from microwave. Add 3 tbsp water; mix together. Spoon topping over warm apples; microwave again, uncovered, 5 min.
Serve with Greek yogurt, if desired.
